L&rsquo;amande contient essentiellement un sucre (l&rsquo;amidon) et une prot\u00e9ine (le gluten). L&rsquo;enveloppe est constitu\u00e9e de cellulose et de min\u00e9raux (les cendres).<\/p>\n<p style=\"text-align: justify;\">Apr\u00e8s \u00e9crasement du grain, le \u00ab\u00a0blutage\u00a0\u00bb (tamisage) permet de s\u00e9parer la farine (amande \u00e9cras\u00e9e) du son (donc de l&rsquo;enveloppe du grain). Cette op\u00e9ration va permettre d&rsquo;obtenir plusieurs types de farine.<\/p>\n<p style=\"text-align: justify;\">En France les farines sont d\u00e9sign\u00e9es par un \u00ab\u00a0type\u00a0\u00bb pr\u00e9c\u00e9d\u00e9 de la lettre T, qui correspond \u00e0 un taux de cendre typique de la farine en question, exprim\u00e9 en 1\/10 000. Par exemple l&rsquo;incin\u00e9ration de 100 g de farine de type 55 (\u00ab\u00a0T55\u00a0\u00bb) produit environ 0,55 g de cendres min\u00e9rales.
